plumpladyWell I haven’t written much lately because I have been so busy, but that doesn’t mean I haven’t had tons to write about – because I do!  I just don’t really know where to start.  (Should I talk about God, starting nonprofit, starting new business, making changes, family, raising a teenage girl, having my mom live with me, volunteering, or should I just start with me…it is time for self-reflection.)  So here I go…

I have made a lot of changes in my life this year and I feel so blessed!  My work is fun and I feel like I am making a difference and really helping others.  You see – I am pursuing my passion and God has been my guide through all of it!  When you choose to TRUST God – he just makes things so clear.  I always tried to control things but when I finally turned to him and let him have control – things are so much better!

I feel good – that is strange for me to say because I have so many health issues.  Last year about this time – I honestly felt like I only had a few months to live.  I was stressed, depressed and literally hurt all over.  I thought I had a terrible illness – cancer or something.  Have you ever felt that way?  Luckily, I have made changes in my life and I have more energy, feel better, sleep better and am not stressed.  What a difference that is… Now, I really want to lose weight but this is a WAR that I struggle with daily.  I have started working out at least two days a week and I enjoy that and I have done pretty good with that.  I am getting stronger and more flexible.  My real problem – the Food.

Food stresses me out.  I love food.  I love all the herbs, nuts, meats, veggies, fruits…not cakes or chips or anything like that – not even bread – so what is the problem?  My problem – I like convenience – does anyone else deal with this issue – I NEED HELP!  I work a lot and volunteer a lot and sometime I do not have time to determine what to eat; so I run through the drive through and grab food for my family.  We eat out a lot – ALOT.  I know that is a big issue.  I have bought those trendy trays so that I can prepare my food ahead of time but seriously I am not excited about that.  I really don’t want to eat the same meal every day – how boring is that.  I get tired of chicken done forty-nine ways.  It is still chicken…. BORING!!!  You see I like Pasta because you can prepare it 49 ways and it taste different every time – oh and it takes 10 minutes.  So I have diagnosed my problem with food – I need food that is convenient – quick to fix – healthy – without being BORING!

I truly appreciate different tastes and my palette is gourmet cuisine!  I love the perfect cheese on an oat cracker drizzle with a little honey and then followed by a fig.  Yes, that is what I’m talking about.  I love the deliciousness of mixing foods and flavors together to find that perfect combination.  Oh the taste- I roll my eyes just thinking of the surprise of sweet, crunchy, tasty amazing treat.  Sorry – got distracted for a minute!  I need help!

What do you eat?  How do you not get bored?  How can I win this WAR?  I would just take a win of a battle right now.  I am so frustrated with myself.  Why is this so hard?  I want it but I don’t want to work for it – that is not who I am except where food is concerned.  How can it have such a hold on me?

Food – Step Two



I may seem like an expert on eating healthy and I feel like one –  I have read, studied, prayed, and ate right.  Why is this one of the hardest things to stick with?  I LOVE eating all these foods and when tempted with other things – I am strong!  My issue –  I don’t always have the right things at the right time to eat.  Sometimes my schedule doesn’t allow time to go to the grocery store or the farmer’s market.  Sometimes I am just too tired to cook, clean or prepare food.  Sometimes I just need to eat and pasta is easy, canned food – easy, frozen dinner – easy…this is my issue.  Sometimes having all these wonderful fresh foods costs lots of money, must be eaten quickly and the rest of my family don’t know how to prepare!  Eating healthier takes time to buy the right things, prepare them, and to plan better.  I love having a fabulous colorful plate that beams with color, vitamins and minerals and just taste like perfection!  I need to plan my month, stick to my plan and journal my every bite.  I like to track on MyFitnessPal App.  I have used as well.

I am going to take my inspiration as shown in the Bible.  In Daniel Chapter 1 verses 8-15, Daniel chose to eat his way and not the Kings’.  He stood firm on eating for God.  He could have eaten all those lavish royal feasts, but he chose to eat simple, fresh food.  Daniel Chapter 1  –But Daniel resolved not to defile himself with the royal food and wine, and he asked the chief official for permission not to defile himself this way. Now God had caused the official to show favor and compassion to Daniel, 10 but the official told Daniel, “I am afraid of my lord the king, who has assigned your[c] food and drink. Why should he see you looking worse than the other young men your age? The king would then have my head because of you.”  11 Daniel then said to the guard whom the chief official had appointed over Daniel, Hananiah, Mishael and Azariah, 12 “Please test your servants for ten days: Give us nothing but vegetables to eat and water to drink. 13 Then compare our appearance with that of the young men who eat the royal food, and treat your servants in accordance with what you see.” 14 So he agreed to this and tested them for ten days.  15 At the end of the ten days they looked healthier and better nourished than any of the young men who ate the royal food. 16 So the guard took away their choice food and the wine they were to drink and gave them vegetables instead.

The Daniel Plan focuses on the core food groups of healthy carbs, healthy fats, healthy protein, healing spices, drinks, and super foods. And The Daniel Plan gives an easy guideline to use for any meal:

  • 50 percent non-starchy veggies  (Eat more! You don’t often hear that when you are trying to lose weight and get healthier, but non-starchy vegetables are one food group where you can satisfy your appetite.Vegetables are full of vitamins, minerals, fiber, and look great on your plate—and with so few calories and carbohydrate, everyone can enjoy more!)
  • 25 percent healthy animal or vegetable proteins   Proteins should be approx. 30 – 35 % calories, no more, as you need to balance it with good amounts of vegetables, fruit and healthy fats. Eat only about a palm-sized portion. Protein increases your metabolism. Protein is necessary for muscle repair and growth, it is the building blocks of all the proteins in our bodies, including, skin, bones, enzymes and bloods cells. Without adequate protein, you lose muscle tissue. Increasing lean protein and decreasing refined carbohydrates improves blood sugar, cholesterol and decreases high blood pressure.
  • 25 percent healthy starch or whole grains – Make sure to carefully choose WHOLE GRAINS!  This can be confusing but look for the whole grain stamp.  Eat Gluten free – this is an easy way to ensure that any grains you are eating are whole grain.  Do NOT eat processed grains.  From the website…  Whole grains contain all three parts of the kernel. Refining normally removes the bran and the germ, leaving only the endosperm. Without the bran and germ, about 25% of a grain’s protein is lost, along with at least seventeen key nutrients. Processors add back some vitamins and minerals to enrich refined grains, so refined products still contribute valuable nutrients. However, whole grains are healthier, providing more protein, more fiber and many important vitamins and minerals.
  • Side of low-glycemic fruit –  OK so I am no expert and have to look all these things up – but it is easy – just google, read, ask and you will find the answers:  Berries, cherries, peaches, plums, rhubarb, pears, and apples are optimal fruits; melons, grapes, and kiwifruit are suitable but contain more sugar. Organic frozen berries (from Cascadian Farms) can be used if you make protein shakes. (This is a good way to get your protein in the morning.)
  • Drink—water or herbal ice teas (Hot or Cold)  Drink at least 8 – 8 oz. each day.  I like to drink bottled water so they are typically twice that size so I drink one before I get to work, one before lunch, one after lunch, one before bedtime.  I drink water during meals too so that ensures that I get my minimum needed daily.  I don’t drink anything else.
  • Snacks: Seeds, Nuts (Not peanuts), Beef or Turkey Jerky, Fat Free Yogurt occasionally,

The Daniel Plan Connection


The Daniel Plan by Rick Warren has been my inspiration recently!  I needed to start taking care of myself and doing a better job of eating right, exercising and focusing on God.  That is why I chose the Daniel Plan…the five elements include FAITH, FOOD, FITNESS, FOCUS, FRIENDS…and I add one – FUN!  My plans were to be perfect over the 40 days we know as LENT…I would eat, exercise, study Bible, pray, and be a completely different person. I started off really strong – I could tell I was losing weight but I got so hung up on how much I was losing that I decided to stop weighing.  I have done a little more exercise than I was but not nearly enough to make a difference.  I have studied Daniel and have read the Daniel Plan and feel really stronger in my faith and I feel that I have inspired others.  I am still not where I wanted to be at the end of the 40 days but I am a lot better than where I was.  I am discouraged but I am also proud.  I have started a Facebook page called the Daniel Plan Connection and I know that our group is supporting each other.  People talk to me about healthy eating and exercise which is kind of funny but they know that I am passionate about it!  I really think this is my ministry.  I know that one of my strengths is inspiring and encouraging others so I feel that my interest in being healthier can be a way to reach out to others!  I just wish I was doing a better job setting an example.  My life is so busy and I don’t make the time for exercise.  I think that I am eating so much healthier and love my food.  I rarely cheat and am really not interested in any bad foods.  I am happy that I am studying Daniel and am really enjoying different Biblical studies, movies, etc. 

So I need to get some inspiration about exercising – any thoughts? I have tons of friends that have invited me to come join them; I have the best trainer in the world and have a great time when I work with her – just don’t tell her…and I like lifting weights and being at the gym.  I just can’t seem to find the time.  I have a teenager and have to take her lots of places and I have a new job, but I still should find some time…I don’t.  Why is it?  I have started praying about having time and taking advantage of my spare time to take care of myself.  I am going to start doing more things at home – that is better than nothing.  I need some inspiration….so that I can have some perspiration!

On the road again…to a new and healthier you!

road       So, here I go on another journey…you would think I would be tired as I trudge down the same old road of getting healthier…I have been here before and I am sure I will be here again but I want a different path this time.  I am so tired of going down the wrong road – I mean – I just don’t fail,  but something about losing weight, taking care of myself – I am a complete failure – where did I make the wrong turn?  I want to plan a path of change, something that I can handle that is not to stressful and something that will produce results.  This time I am going to plan my journey so that I don’t veer off course.

This time I have decided to do something different.  I have prayed about how I could be healthier, how I could be better, and how I could lose weight.  I heard someone mention the Daniel Plan and it peaked my interest.  Then I heard it again that same week and someone said they had just started it and loved it!  Then God practically smacks me upside the head…I was standing in line at a Christian bookstore and while I was there I caught a glimpse out of the corner of my eye—something lime (My favorite color).  I am naturally drawn to that color, so I looked at the title of the book, naturally…It was “The Daniel Plan” a book by Rick Warren (Who also wrote The Purpose Driven Life).  OK God – I get it!  I should explore this is an option.  The five essential parts to the Daniel Plan are Faith, Food, Fitness, Focus & Friends…sounds reasonable.  So I started researching and realized that the Daniel Plan was very similar to the Paleo Diet that I had been successful with last year so I know I can do this.  What I missed last year was the other parts…I need to focus, to utilize my faith in God and to share with my friends.


There were great things on the website   Rick Warren and his fabulous team have so many sermons, lessons, verses, inspirations that I know it is the direction that I need to go in!!


Therefore, I decided to start at the beginning of Lent season.  I started a Facebook page called the Daniel Plan Connection, so that I could share information, have a place to discuss when I need a little encouragement and just a place to share recipes, inspirations, funnies, etc.  We are three weeks into this now and I have about 50 friends that have joined my journey.  I still struggle some but not nearly like I did and now I have someone to keep me accountable, to inspire, to share best practices, etc.  If I stray off course – I am encouraged to get back on and I keep chugging along.

I love the food that I am supposed to eat and I am enjoying it!  I do not feel deprived.  I have eased into it by cutting out all white products (Rice, Flour, Bread, Potatoes, etc.)  I am only drinking water and try to drink at least 72 oz. per day.  I have upped my veggies and fruits and am just paying attention to what I eat.  I am getting a little stricter each week.  I plan to start the Daniel Fast next week and it is even a little stricter.  I can do it though if I plan, buy the right groceries, etc.

The Daniel Plan is about so much more than eating though.  I have really started to think about my faith – I have read Daniel and have watched YouTube, Googled, read many translations, started the Beth Moore study on Daniel, and have just grown to LOVE the book of Daniel in the Bible.  It is so intriguing and there are so many things that I never really got from it before.  I have tried to establish a better prayer routine as well.  I pray breath prayers all the time – you know—the ones where you say just a word and God knows what you are saying. My daily prayers used to be when I was driving somewhere.  That was my alone time with God.  You know, I realized that really was not good enough and I needed to treat God better.  I am still struggling to find time to make it special every time, after all he is so special and wonderful and forgiving and I need to treat him more holy!  I love that I am casual with God but I feel a strong sense of needing to be more respectful.  He is God after all!

Well, I hope to be writing more often so that I can encourage, support and inspire you to take care of yourself and take care of the body God gave you – it is the only one you have!  So I think they were missing one Essential Element of the Daniel Plan and that is ….FUN!  When you are taking this journey – make it fun, have get togethers, yoga parties, recipe swaps, Bible Study.  This is the secret passage to a better and healthier you!  Safe travels….

Eat, Drink and be Merry and Get Healthy


I love food – every kind!  You could say it is my hobby…I eat when I am happy, stressed, mad, for enjoyment,well,  for every possible reason.  I love cooking, eating out, tasting new recipes, cooking family recipes…let’s facing…I am a foodaholic!! I have struggled over the years with eating right, working out and just getting healthy.  I have dieted, exercised and just can’t seem to stick with anything.  Last year I lost 43 lbs. and then stopped losing – no matter what I tried – I gave up…I gained it all back…why can’t I do this?  I am not a failure.  I am sure so many of you feel the same way – it’s yo-yo time!  Up and down with dieting, healthy living and exercise.  Usually we are so committed at first and then somehow we don’t have time, we don’t make time, we let other things come between us and taking care of ourselves – all good reasons we think – but if we are not around long enough – we will not be able to take care of these things.  I learned that it is ok to pray for yourself, to take care of yourself, to make time for exercise – you are not being selfish – you are trying to make sure you are going to be there for others for a much longer time!  

So once again, I tried to start about 4 weeks ago and I am eating so much better and I have lost 10 pounds.  I wanted to lose more and I wish it was coming off much faster but this time – I am having fun with it!  I have been craving Fried Chicken – one of my favorite foods.  Well – not exactly a healthy choice but today – I must say – I am very impressed with the best tasting “fried chicken” that I ever made.  I took some chicken breasts and flattened them and rolled them in crushed pistachios and drizzled them with honey and put some olive oil in a baking dish and baked them.  Not only were they beautiful – they tasted amazing!  I have found fabulous recipes and am being creative with our meals.  Why can’t eating healthy be fun?

I am praying and preparing to begin the Daniel Plan (from the Saddleback Church – Rick Warren’s church) for Lent beginning March 5 through April 17.  40 days to a Healthier Life.  Faith, Food, Fitness, Focus and Friends – sounds like a winning combination for me.  I hope you will think about joining me in this plan.  I am studying Daniel and looking at videos so that I can be ready when I start.  Pray for me that I can be completely committed during this 40 day period.  Let me know if you need my prayers and if you will join me.

Lets talk turkey…or should I say, let’s eat turkey!

So how did that delectable but awkward bird,the turkey, become famous for the Thanksgiving meal? I researched this and found many variations…apparently they didn’t have turkey that first gathering together…they had venison, fish, etc. Years later, the governor of MA requested that his people get a turkey but that referred to any wild bird…so it’s hard to know the real reason but I think we would all agree…Thanksgiving and turkey just go together.

Turkey is low in fat and high in protein. It is an inexpensive source of iron, zinc, phosphorus, potassium and B vitamins. A serving of turkey is a 2 to 3-ounce cooked portion. The Food Guide Pyramid suggests 2 to 3 servings from the meat group each day. Wowww…sounds like the perfect meat for us to eat! One of the other things I read in my research was that turkeys were easy to fatten up, low costs, and could serve a large group.

So this year, I have changed my way of eating….notice I didn’t say that I was dieting. I have tried to eliminate starches, sugars and dairy so what am I going to eat with my turkey? I have found that PaleOMG is an awesome website with great recipes. Yummy! I tried the Sausage with carmelized onion stuffing today and it was great!

I can have other vegetables liked mashed cauliflower, Brussels sprouts, cranberries sweetened with honey, cinnamon, orange peel and cloves and I am getting a pretty amazing meal. Focus on fresh and natural. I was able to get some mustard greens at the farmers market and they were tasty also.

So no pecan pie but really, a hand full of fresh picked pecans taste even better.

I’m excited to be able to eat my turkey but also about trying some changes in my menu. It’s good to make changes. Be committed to these changes, don’t set yourself up to fail. Drink lots of water, don’t hang out in the kitchen or standing around the table. Be prepared, have snacks…nuts and apple. Eat healthy…eat turkey…..and all the sides!! Be healthy!
